Shukshuka

This is another delicious egg dish. After living in Saudi for a couple of years, a sweet Saudi lady had me for breakfast where she made these eggs. I asked her for the recipe and years later my daughter makes them all the time.

Ingredients

3 eggs
3 Roma tomatoes chopped
2 cloves fresh garlic chopped
1/4 cup chopped onion
Olive oil for cooking
Salt, 1/4 tsp. Cumin

Directions

In a large fry pan put a couple spoons olive oil, add onions and garlic. Saute for 5 minutes, add chopped tomatoes, salt and cumin. Cook until tomatoes break down and it’s saucey.

Crack eggs into bowl and whisk, add salt and a pinch of cumin, whisk well.
Turn tomato mixture on medium high and add eggs. Stir to scramble eggs. When eggs are done remove to plate and yumm!

    So funny, I have this dish on my blog, as we make this for breakfast in Afghanistan and we call it “Tokhom Bonjan” 🙂

    • funnny! Well I have had several friends from Afghanistan and have enjoyed their food and there are similarities for sure!
