This is a delicious side dish and is allot like hummus. It is baked eggplant, blended with garlic and Tahini and is one of my favorite things! I am making this my way which is a tiny bit different than most. I do not grill the eggplant, also I blend the eggplant instead of mashing it.
1 large clove garlic
2 Tbs. Lemon juice
2 Tbs. Tahini
1/2 tsp. salt or desired amount
You can add more or less of these ingredients according to your taste.
Preheat oven to 400 degrees
Wash and dry eggplants, cut off top stem area, discard. Prick outside of eggplant in several places and place on baking pan, put into oven. Let bake until totally done and soft. Remove from oven and let cool. Take peel off of eggplant and discard.
Place eggplant into food processor or blender. Add other ingredients and blend until smooth. Pour onto a plate, sprinkle with olive oil. This is usually eaten with Arabic bread.
