Feta and olive salad


One day while I stood in line at the deli waiting for my turkey I saw a delicious looking salad. It seemed to have cucumbers, tomatoes and olives. It was quite pricey per pound and for 8 people I would need hmm, allot! So I went home and tossed together the things I thought were in it. I love this combination and this is my version! A note– I have found this salad does not last long so make it right before serving and make enough for that meal. I eat it later but it doesn’t stay fresh!


2 cucumbers, cut into chunks

3 tomatoes cut into chunks

1/2 bunch parsley chopped fine

2 cloves garlic minced

10 kalamata olives, no pits, sliced

1/2 cup crumbled feta cheese

juice of one lemon

2 Tbs. olive oil

1 tsp. salt or to taste




Mix it all together
