Apricot Chicken with peppers
4 Chicken breasts cut into thin strips
2 Green Bell Peppers cut into slices
1 onion chopped
1/2 cup salted cashews
1 cup chicken stock
1/4 cup soy sauce
1/4 cup sugar
1/2 cup apricot preserves
Mix sauce ingredients
In a large pan put olive oil, chicken and onions, cook and cover. Add Peppers and continue cooking.
When this is all cooked, add sauce. Let mixture cook in sauce to get this wonderful flavor. Add Cashews in the end. Turn off heat. Use 1 Tbs. Cornstarch mixed in water, mix well add to mixture in pan, stir well, turn heat back on, let this boil stirring constantly until slightly thickened. Serve over white rice.
