Fabulous Fudge frosting

IMG_1437

My mom used to make a special chocolate cake and the recipe was passed on by a Swedish lady in their little town. The frosting had a fudge like consistency and delicious texture! I tweaked it a bit and this is the result. It  tastes like fudge and is a very special frosting for any cake. The original recipe calls for placing the bowl of frosting in a second bowl of ice to get this texture. This was a long and tiring process so I discovered the same results were possible when simply placing the bowl in the refrigerator before beating. This frosting gets firm so should be used right away.

Ingredients

1/2 cup semi sweet chocolate chips

1/4 cup whipping cream (not whipped)

1/4 butter

2 1/4 cups powdered sugar

Directions

Place chocolate chips, cream and butter in a sauce pan on low heat. Whisk until smooth and chocolate chips are melted.

Put powdered sugar in mixing bowl, add chocolate mixture and mix well. Put bowl in refrigerator for 30 minutes. Beat mixture well, it should turn into a fudge like topping. Use immediately to frost a cake or cupcakes. Refrigerate.
