My middle child, little Abude, loves to make sandwiches. Sometimes his sandwiches are eggs, chicken strips, topped with salsa and fries, other times they are more common, but they are never dull. He whipped this one up a few years back and it continues to be a favorite so I want to share it with you! This sandwich can easily go vegetarian, omit turkey, add more veggies and there you have it!
Ingredients for 4 servings
8 slices of quality bread
1 pound deli sliced turkey- more or less
4 Tbs. whipped cream cheese- to taste
1 cup grated cheddar cheese
1 tomato sliced thin
1 cucumber, peeled and thinly sliced
1 cup lettuce chopped small
butter for toasting
Ketchup and mayonnaise- optional
Spread cream cheese on one slice of bread. Place turkey slices on second piece of bread and top with grated cheese. Put two pieces of bread together. Put 1 tbs. of butter in a pan or on a griddle and heat it up. Melt butter and then place sandwich on pan. Let this brown and turn over. Cook sandwich until both sides are toasty and cheese is melted. Remove from griddle, open sandwich, put cucumber slices, tomato slices and lettuce, close and press together. You can add ketchup and Mayonnaise, this is what the chef does but it’s optional! Enjoy!
