Tomato Cucumber Middle Eastern Salad

This is a delicious salad that goes with many rice dishes in Arab countries. It is so good and so easy.

Ingredients

2 cucumbers, peeled, cut lengthwise and into thin strips, then cut into little pieces.

4 Roma tomatoes, wash and chop into small pieces

1 carrot, peeled and grated

1 garlic clove minced

1/2 bunch of fresh parsley chopped

juice of 2 lemons

3 Tbs. Olive oil

salt to taste

Mix all ingredients and chill

  1. It looks like what we had today except we added an avocado…and I use limes instead of lemons a lot…I love the fresh garlic and parsley….your pictures looks so yummy, and pretty on your blue plate…fresh vegie salads are soooo good……

  2. A nice combination of salad ingredients, and so well presented. I can see that it would be a great accompaniment to many dishes, particularly rice ones.I imagine people could add other ingredients too, according to taste

      1. I love photographs and have just ‘got into’ taking lots of photos wherever we go. I have boxes full of photos from the old rolls of film, so I may photograph some of those for posts about other places we visited been before the days of digital photography. I have lots from Egypt, Tunisia and Kenya – all places we’re unlikely to visit again because of political problems out there now.
        Isn’t blogging great for stretching the imagination? I can imagine you planning all the recipes you’re going to post about. I’m looking forward to reading them. 🙂 Have a great weekend!
